
Chocolate Coconut Cups
- 2 cups shredded coconut
- 2 tbs coconut oil (melted)
- 1 scoop protein powder (I used a vegan vanilla powder)
- 1 tbs honey
- 1 serving chocolate chips (I used Ghirardelli 60% cacao chips)
- Combine the first four ingredients in a mixing bowl, making sure that shredded coconut is well coated.
- Distribute six equal portions of coconut mixture in a muffin tin.
- Melt chocolate chips and drizzle over each coconut cup.
- Place muffin tin in freezer for at least 30 minutes.
- Remove from freezer and enjoy!
